Hello, I’m Nicole and I am the proud owner of Layers Cakes and Confections

As a child I grew up around the food industry and I always wanted to open a restaurant. As I grew my passion for baking took off, and my dream of opening a restaurant quickly changed to a bakery.

When I was 21 I decided to turn my passion into a career. I attended George Brown College where I study baking and pastry arts, while in school I interned at Patisserie la Cigogne and started working at Oliver and Bonacini as a pastry assistant. Within 9 months of working I became pastry chef where I created daily specials and organized dessert menu for large parties and events. While still a student I decided to focus my career in wedding and specialty cake. I entered a wedding cake competition in 2011 where I placed 2nd in the student division.

After finishing school I worked for a couple of renowned wedding cake bakeries. Since then I have started a family and now have two beautiful boys. Following the birth of my first son I deciding that staying home and focusing on him and my cakes was the best of both worlds. I am fortunate to be able to do what I love every day! There’s nothing better than a flawless, pristine cake that also tastes as amazing as it looks. I take great pride in my sweet, delicious craft, which is why I personally bake, design, and decorate all of the cakes.
